Another recipe! Finally! Prepare for some mouthwatering deliciousness people. The pizza rolls you crave, but healthier! Making these with egg roll wrappers instead of bread simplifies this recipe and lowers the calories. There are a lot of people that cannot eat bread, so here's your solution when you are craving something cheesy and saucy! This has become a regular meal in our house.
Ingredients:
4 egg roll wrappers
4 tsp of pizza sauce
Italian seasoning
12 pepperoni slices
2 mozzarella cheese sticks
very small bowl of water
Directions:
1. Preheat oven to 425, and spray a baking pan with non-stick cooking spray. ( I have amazing non-stick cookie sheets, but these things are so dang sticky, that I recommend using a regular cookie sheet with non-stick spray.)
2. Lay out an egg roll wrapper to where a corner is facing you, instead of a flat side facing you.
3. Place 1 tsp of pizza sauce in a line in the middle of the wrapper from the left corner to the right, sprinkle a pinch of Italian seasoning on top of the sauce.
4. Place three pepperoni slices (or salami, or whatever you would like, even olives for a vegetarian!) along the line of pizza sauce.
5. Break a cheese stick in half, placing one half aside (for another wrapper) and the other half on top of the pepperoni slices.
6. After applying all ingredients, dip your finger into the bowl of water, and apply to all corners of the egg roll wrapper. (You could do this all at once, or as you fold the wrapper.).
7. Fold the corner closest to you up and over the cheese stick. While holding that down, fold in the left corner, and the right corner (the water on the corners helps the egg roll wrapper stick together, you can see this being done above in the pictures next to the title).
8. After those three sides are folded in, roll the pizza roll to where the last corner is wrapped around the roll.
9. Place the pizza roll onto the already sprayed cookie sheet, and repeat until all pizza rolls are made.
10. Stick pizza rolls into the preheated oven for 7 minutes. When time is up, take them out and turn them over and place back into the oven for another 7 minutes. Then let cool some, serve with some pizza sauce on the side for dipping, and you're ready to eat!
My Hubs likes to add extra pepperoni to his, so don't be afraid to do that if you want! Let me re-phrase that.... Hubs asks me to add extra pepperoni to the ones I was making him haha! Hope you enjoy, we sure love these!
