Buffalo Chicken Quesadilla


Boy oh boy! It has been a long time since I've put up a delicious meal on the blog. I literally just ate this two hours ago for lunch, and it is most definitely blog worthy, so here you go hungry readers.

Buffalo Chicken Quesadilla

Ingredients:
1 Sun Dried Tomato Wrap Tortilla
2 Tablespoons of Crumbled Blue Cheese
1/2 Cup of Shredded Cheddar Jack Cheese
2 Teaspoons of Cholula Hot Sauce
1.5 Ounce of Shredded Cooked Chicken

Directions:
1. Place tortilla on griddle, low heat.
2. While tortilla is heating, mix shredded chicken and hot sauce in small bowl.
3. Flip tortilla over on griddle.
4. Sprinkle 1/4 cup of shredded cheddar jack cheese onto half of tortilla, and turn griddle heat to medium.
5. Sprinkle all chicken on same half of tortilla.
6. Sprinkle blue cheese crumbles on same half of tortilla, and then other 1/4 cup of shredded cheddar jack cheese as well.
7. Fold tortilla in half, and flip over on griddle with spatula.
8. Let quesadilla heat on each side for a couple minutes until inside cheese is melted.
9. Cut quesadilla into four slices, serve with a dipping sauce (I chose buttermilk ranch), and enjoy!
