I love a good Chinese food dish, especially when it's chicken that has a sweet and spicy taste. You can never go wrong with that and some white rice! This dish was a lot of fun to make, and tastes absolutely delicious.
Ingredients:
1 lb of boneless, skinless chicken breast
Salt & Pepper
1/2 cup of cornstarch
3 eggs, beaten
1/4 cup of vegetable oil x2
Sauce:
1 cup of light brown sugar
1/3 cup of buffalo sauce, or more to taste
1 tbsp of apple cider vinegar
1/4 tsp of salt
1/4 tsp of red pepper flakes
1 tbsp of water
Directions:
1. Preheat oven to 325 degrees. Spray a 13x9 baking dish with non-stick spray.
2. Cut the chicken breast into bite size pieces.
3. In a bowl, whisk together sugar, buffalo sauce, vinegar, salt, red peppers, and water, then set aside.
4. In another bowl, season chicken with salt and pepper. Toss in cornstarch until chicken is covered.
5. Dip one bite size piece of chicken into the beaten eggs at a time.
6. Heat vegetable oil in a sauce pan until bubbling. Add half of the chicken and cook until golden brown, then transfer to layers of paper towels to soak oil.
7. Repeat with the other half of the uncooked chicken.
8. Add all chicken to the baking dish and add sauce on top. Cook in oven for 15 minutes.
9. While chicken dish is in oven, cook rice or other side dish of choice.
10. When chicken is done in oven, stir, and serve over rice! Enjoy!
